Fiorella's Jack Stack Barbecue
Jack Stack Barbecue originated in Kansas City, in 1957, by Russ Fiorella in the traditional style of a storefront barbecue, with a modest selection of five to six items. Jack Fiorella, the eldest son, worked with his father until 1974, when he decided to branch off and start Fiorella's Jack Stack of Martin City.
To stand out in the competitive KC BBQ scene of the mid 1970’s Jack and his wife, Delores, began cooking with Gourmet Hickory Wood and created the most extensive barbecue menu in the country. The menu included Certified Angus Beef steaks, tender chicken, award-winning lamb ribs, and mouth-watering side dishes like Hickory Pit Beans and Cheesy Corn Bake. Still not satisfied, they began grilling fresh seafood over hickory wood, an idea they acquired from their travels along the Yugoslav coast.
Today, the restaurant has evolved into the largest, full-service Wood Cookery in the industry. Jack Fiorella's son, Kevin, and son-in-law, Case Dorman have grown up in the business and are now managing general partners in the company. The family has added restaurants in Overland Park, Kansas and Kansas City, Missouri in the Historic Freight House District behind the landmark Union Station, as well as their newest location on the Country Club Plaza.
